_Book Nani
Two generations cook together through all four seasons. Pear bread, cabbage wraps, Maluns, Suurbrate, rhubarb cake and Rötali: 80 Graubünden classics and favourite dishes from Nani`s recipe collection show the diversity of her traditional cuisine with vegetables and fruit fresh from the garden.
For a year, Nani`s recipes were cooked, written down and photographed together every week and finally immortalised in the cookbook `NANI`. At 87 years old, Nani is a living book full of experience and her positive charisma inspired us deeply. With her recipes, we hope that her passion and joy for cooking can live on.
Dreaming: Nani`s secret dream was to one day hold her own cookbook. Nani has countless recipes - some written by hand on envelopes or collected in old, falling apart cookbooks. These are recipes that have proven themselves over decades but were in danger of being forgotten. To prevent this and at the same time fulfill Nani`s heart`s desire, we decided to create the cookbook `NANI` together with her.
Cooking: For a year, Nani was accompanied through all four seasons and together we cooked her Graubünden classics and favorite recipes - depending on what was in season and what was growing in Nani`s garden. As she runs a farm, Nani is used to cooking seasonally from the garden. An expertise that is no longer a given these days. For the authors Lea and Katharina, sustainable nutrition is important and a conscious decision; for Nani it is a matter of course acquired through her life experience. The authors learned to cook good, home-style meals using naturally grown, home-grown food according to Nani`s principle.
Appreciation: The cookbook is a two-generation project that combines our different skills. Nani enjoys being able to pass on her knowledge to the younger generation. NANI is a cookbook, but it also shows valuable social aspects. In our society, we often forget how much we can learn from older generations. Through the cooking sessions at Nani`s in Felsberg, everyone was able to benefit from an intensive exchange.
